Just as the title says are they because I have a lot, just to keep my food from maximum.

Yeah, they can be used in the stables to make villagers get on horses and grab weapons! :cool:

By that he means, Evil uses them in production of Knights and Hobelars.

At the Stables you can breed Horses. To breed Horses you'll need 200 Food for each horse. Evil need Horses to make cavelry, so you could make a deal with them in exchange for your Horses. If you are good you can also use them at the Marketplace to produce Trade carts; which you trade with.
